The information you found is inaccurate to a large extent. Paladins can tank, obviously. With deep faith, you have up to +10 deflection, and +20 other defenses. In terms of pure defense stats, Paladin is superior to Fighter. Fighter has the benefit of overbearing guard, but this passive isn't necessary.
