You can also grab the uchigatana in limgrave and dual wield katanas for more bleed and try jump attacks and power stance move sets. Or the meteoric ore blade for another innate magic katana if you wanna do that.

There isn't much spells that deal poise damage aside from gravity spells. I think Flame of the Redmanes is a unique one just for fire spells so I don't think they will ever nerf it. Just like Glintblade Phalanx being a unique sorcery that deal poise damage.
