By level 20, a max Dexterity Monk winds up 1 AC ahead, having caught up around level 10 thanks to ability increases and Bracers of Armor. Monks can take Crane Stance and/or a Bo Staff for +1 AC each, while a Fighter can rock a shield for +2 AC.
It's often said never multiclass casters, but multiclassing martial classes isn't much better. As for monk specifically, dipping into monk is usually better than dipping out.
