A lot of us (including myself) don't really like seeing the numbers so high, but there's no choice but to accept that the engineers designed the engine to operate at this temperature range.Crank position sensors are known to go bad on the 3.6 and cause surging/power loss around 1.5-2k rpm. I would probably start there, since it's a cheap and easy swap. That is typical of a low coolant level, or having air in your engine cooling system. The coolant level needs to be checked. If low, then fill and bleed the air out of the system. If full, there can still be air in the system from the Thermostat change out.
